Berry Burst Oatmeal Bars!

Baked Oatmeal Bars (Freezer-Friendly)

These are fantastic for meal prepping a week’s worth of healthy breakfasts.

Yields: 8-12 bars (depending on size)

Prep time: 15 minutes

Bake time: 30-35 minutes

Ingredients:

  • 2 cups rolled oats (old-fashioned oats)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar or maple syrup (adjust to taste, can reduce or omit)
  • 2 large eggs, lightly beaten
  • 1 3/4 cups milk (dairy or non-dairy)
  • 1/4 cup unsweetened applesauce (or melted coconut oil/butter for richer taste)
  • 1 teaspoon vanilla extract
  • Optional Mix-ins: 1 cup berries (fresh or frozen), 1/2 cup chopped nuts, 1/4 cup shredded unsweetened coconut, 1/4 cup chocolate chips

Instructions:

  1. Preheat & Prepare: Preheat your oven to 375°F (190°C). Grease an 8×8-inch or 9×9-inch baking dish, or line with parchment paper leaving an overhang for easy removal.
  2. Combine Dry Ingredients: In a large bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the brown sugar/maple syrup, eggs, milk, applesauce, and vanilla extract until well combined.
  4. Combine & Add Mix-ins: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in any optional mix-ins you’re using (e.g., berries, nuts).
  5. Bake: Pour the mixture evenly into the prepared baking dish.
  6. Bake for 30-35 minutes, or until the edges are golden brown and the center is set (a toothpick inserted into the center comes out clean).
  7. Cool & Serve: Let the baked oatmeal cool completely in the dish on a wire rack before cutting into bars. This is crucial for them to hold their shape.
  8. Store: Once cooled, cut into individual bars. Store in an airtight container in the refrigerator for up to 5 days, or wrap individually and freeze for up to 3 months. Reheat gently in the microwave or enjoy cold.
