Yields: 6 servings Prep time: 20 minutes Bake time: 35-45 minutes Total time: 55-65 minutes
Ingredients:
For the Fruit & Veggie Filling:
- 4 medium apples (such as Honeycrisp, Gala, or Fuji), peeled, cored, and diced
- 1 cup finely grated carrots (about 2 medium carrots)
- 1/4 cup maple syrup or brown sugar (adjust to apple sweetness)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of ground ginger (optional)
For the Healthy Oat Crumble Topping:
- 1 cup rolled oats (old-fashioned)
- 1/2 cup whole wheat flour (or all-purpose flour)
- 1/2 cup chopped pecans or walnuts
- 1/4 cup melted coconut oil or unsalted butter
- 2 tablespoons maple syrup or brown sugar
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions:
- Preheat & Prepare: Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish or a 2-quart baking dish.
- Prepare the Filling: In a large bowl, combine the diced apples, grated carrots, maple syrup/brown sugar, lemon juice, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and optional ginger. Toss gently until everything is well coated. Pour the mixture evenly into the prepared baking dish.
- Make the Crumble Topping: In a separate medium bowl, combine the rolled oats, whole wheat flour, chopped pecans/walnuts, 2 tablespoons maple syrup/brown sugar, 1/2 teaspoon cinnamon, and salt. Pour in the melted coconut oil or butter and mix with a fork or your fingertips until well combined and crumbly.
- Assemble & Bake: Sprinkle the crumble topping evenly over the fruit and veggie filling in the baking dish.
- Bake for 35-45 minutes, or until the fruit filling is bubbly around the edges and tender (you can test with a fork), and the crumble topping is golden brown and crispy. If the topping browns too quickly, you can loosely tent it with foil.
- Cool & Serve: Let the crumble cool for at least 10-15 minutes before serving. This allows the filling to set slightly.
- Serve Warm: Enjoy warm on its own, or with a dollop of plain Greek yogurt, a sprinkle of extra cinnamon, or a small scoop of dairy-free vanilla ice cream for a truly comforting treat!
